The Holiday Cocktail – How to Make It

We present a simplified take on a drink featured on the seasonal cocktail list. It's a large-volume pre-mixed which is packed full of flavours of the Christmas time, rendering it perfect for your holiday party. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or for more rounds of the drink.

Bikini Recipe

Yields 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (makes 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Syrup: Combine the listed components in a pot, heat until it reaches a simmer, stirring to dissolve. Then, turn off the burner and leave to cool completely. Transfer into a sealable bottle, seal and store chilled, it can be stored for around one month.

To make Premix: Pour all the liquid ingredients into a large bottle, let it rest for an hour, then filter it preferably using muslin, so it's completely strained.

For serving: Add 85ml from the batch mix into a mixing glass filled with ice, and agitate gently for about 60 seconds to chill. Pour into a chilled martini glass or similar, garnish with a few cranberries and finish by giving it a light spray of mandarin oil over the drink.
